It’s been a couple of weeks since I went to the book launch of Deliciously Ella’s latest cookbook and I have been meaning to give her new recipes a go! I decided what better way than to spend Valentine’s Day, (Hallmark day for those cynics amongst us, myself included) trying out her Peanut Butter and Honey Flapjack recipe. The recipe in her new book does not use (as stated on the Telegraph link) vanilla powder and uses 4 tbsp of honey instead of 3.
I was really pleased with how these turned out. They manage to holdtogether well without crumbling everywhere, though I would advise cutting whilst cold or after being refrigerated overnight. I decided to use a mix of sultanas and raisins but that is just down to personal preference.
These do not provide that sugary, sweetness hit that other flapjacks provide, so sorry sweet tooth lovers these are not for you. Next time I would look at including chopped apricots or cranberries as I think that would liven up the recipe; chopped walnuts or pecans would also make the texture less bland.
In total I managed to make 18 equal sized bars; some of which I will freeze for the weeks ahead.
