Recipe Review: Lime Cupcakes

A short but sweet post from me this Saturday afternoon; reviewing freshly baked Lime Cupcakes from Elizabeth’s Kitchen Diary. I was looking to make some zingy cupcakes and these were really good. The recipe was easy to follow however I did make a couple of tweaks to the recipe because I like a strong and intense lime flavour. I used two limes in the ‘lime cupcake’ section and the juice of one lime in the ‘buttercream’ section.

Vegetarian baking

I couldn’t find the correct nozzle so my buttercream piping leaves a lot to be desired, however the cakes were still ever so tasty!

Time to get creative for Halloween

If you added a splash of green food dye in the frosting and edible spiderwebs (spun sugar) on top then these would work well for a childrens/adults Halloween party.

These kept fresh in an airtight container for around 4-5 days and the cakes were nice and light in texture. I did not need to use a cake mixer but just used a hand mixer.
